Good morning guys and welcome to Blogmas Day 18, there is one week left till Christmas. I can’t believe I’ve made it this far. I am one very happy Zoe. So for today I will be sharing with you a recipe for some Mince Pies that I made. To me Christmas really isn’t Christmas without a few Mince Pies crammed in your mouth, unless you don’t like Mince Pies then that’s cool.
- 375 grams plain flour
- 260 grams unsalted butter, softened
- 125 grams caster sugar
- 1 large egg
- 1 jar of Mince Meat
Step One: Preheat your oven to 220 Celsius.
Step Two: Throw your flour and your butter into a large bowl and mix the two together until you have a breadcrumby mixture.
Step Three: Add in your caster sugar and egg and combine, don’t over mix it.
Step Four: Tip your mixture onto a floured surface and fold mixture until your pastry comes together, looking like a bit of a ball.
Step Five: Roll out your pastry, (I rolled mine out about 3/4mm thick I didn’t measure but it wasn’t thick). I always have no circle cookie cutter so I used a cup to get my bases which were about 10 cm in width. I then placed them into my baking tray.
Step Six: Crack open your jar of mince meat and spoon as much or as little of it as you want into each of your pastry bases. I then with my star cookie cutter cut out the lids for my Mince pies.
Step Seven: Now the recipe I followed told me to egg wash the tops of my Mince Pies but I don’t do that because for some reason it looks burnt once cooked and I don’t like that so I do nothing and I cooked my Mince Pies for 15 minutes, in the centre of the oven.
Step Eight: Finally I let them cool, dusted them with a little icing sugar and munch on a few.
These Mince Pies were so good, I had made some last year and made the pastry really thick so they weren’t that nice, but this year these Mince Pies were winners in my home. Do you love Mince Pies at Christmas? Drop a comment below!
